Rice noodles different ways | Kukskitchen

Any rice based food is close to my heart, being a keralan :). I luv rice noodles and frequently try to add it to my menu. Last week I went to a south asian shop with my neighbour P. She introduced me to this new brand of rice noodles called 'Niru'. I used it this morning for my breakfast and it gave me the silkiest smoothest rice noodles ever. We all loved and ate to our hearts content.

Presented is my easy recipe for rice noodles and its keralan style.





Ingredients

1 - Rice noodles - 200g
2 - Coconut - 1/2 cup
3 - Cashewnuts - 1/4 cup
     Pottu kadala - 1/4 cup
4 - Mustard seeds -1 tsp
     Dried red chilli - 2
     Curry leaves - 1 sprig
5 - Oil - 1 tbsp
     Salt to taste



Method

- Boil rice noodles in a large pan full of salted water till they are done. This will take not more than 5 minutes.
- Drain noodles and keep the water.
- Add dessicated coconut to this water and let the water boil.
- Drain this and add to rice noodles.
- If using fresh or frozen coconut the above step can be avoided.
- Mix using fork.
- In another pan heat 1/2 tbsp oil and fry (3) till ight brown and add to the rice noodles.
- Add 1/2 tbsp more of oil and add (4). When mustard splutters add them to the rice noodles.
- Mix with gentle hands.
- Eat them hot with egg curry or chana curry.



For kids version:

- Donot add the tempering.
- Serve with sugar and chopped fruit. My son luved it with bananas.
