🎓 University Kitchen – Recipe #3 🐟

Perfect Pan-Seared Sea Bass

This is one of those recipes that proves you don’t need a long list of ingredients to make something delicious. It’s perfect for university students, busy professionals, or anyone wanting a healthy meal in under 15 minutes.

With just salt, pepper, chilli flakes, sunflower oil and a little butter to finish, you’ll have beautifully crisp, flaky fish every time.




Ingredients (Serves 2)

  • 2 sea bass fillets (or any white fish such as sea bream, cod or haddock)
  • Salt
  • Freshly ground black pepper
  • ½ tsp chilli flakes (or to taste)
  • 1 tbsp sunflower oil
  • 1 tbsp butter
  • Lemon wedges, to serve (optional)

Method

  1. Pat the fish dry with kitchen paper. This helps the skin become beautifully crisp.
  2. Season both sides generously with salt, black pepper and chilli flakes.
  3. Heat the sunflower oil in a non-stick frying pan over a medium-high heat until shimmering.
  4. Place the fish skin-side down (if using skin-on fillets). Press gently with a spatula for the first 20–30 seconds to prevent the skin curling.
  5. Cook for 3–4 minutes without moving the fish until the skin is golden and crispy.
  6. Carefully flip the fish and cook for another 1–2 minutes.
  7. Add the butter to the pan and allow it to melt. Spoon the foaming butter over the fish for the final 30 seconds to add richness and flavour.
  8. Serve immediately with steamed vegetables, salad, rice or mashed potatoes, and a squeeze of fresh lemon if you like.

Any firm white fish works brilliantly with this recipe. The technique is the same—start with sunflower oil for a crisp sear, then finish with butter for incredible flavour.

Cook time: 6–7 minutes
Total time: Under 15 minutes

Meen mulakittathu is a Kozhikode delicacy and when I visited Calicut after a long time, one of my uncle’s recommended Meen mulakittathu and Porotta. It is truly a delightful combo.


This fish curry is great if you are watching calories or if you want a low fat fish recipe. Still the oil from fish will layer on top giving a delightful taste.

Baked fish is superb as a fish course when you are having a party. They look impressive and taste amazing. I like using salmon due to its texture and lack of tiny bones. The parcels are traditionally made using plantain leaves and cooked in charcoal. The plantain leaves impart a gorgeous flavour to your fish. One of the best meen pollichathu I've had are from my SIL Renju's house. I remember her each time I make these.

I served this on our UK girls 98 get together and it was an instant hit, even if I do say so myself ;).

These have a special place in the culinary trail of western  coastal belt of  India stretching from Goa to Kerala. I present here such a dish that is so similar to the palupizhinja (പാലു പിഴിഞ്ഞ ) fish curry that my mummy makes.

Dry baked fish with coconut milk | Neymeen pollichathu | Kukskitchen



Go to Keralan backwaters and the first thing you would want to eat is dry-baked fish in banana leaves - മീൻ  പൊള്ളിച്ചത് . It was hard to get fresh banana leaves in the capital city where I was born and brought up in. My mum would make something that tastes similar to it in a non-stick pan, finishing with  a drizzle of coconut milk.

Last week during my routine weekend cooking I decided to make her recipe. I wondered how it would taste with  a LOT of sliced onions and  some chopped tomatoes and some chillies. It came out so well so well that dear D had only praises to say. The beauty of this recipe is the fresh steamed delicate succulent taste of the onions and tomatoes.

Tuna n' Carrot Peera | Kukskitchen



Traditionally peera is made with small fish like natholi / anchovy. However, canned tuna is an easy fix. I came across this idea when my friend from school Remya asked me about indian style recipe to do with tuna. Combining tuna with carrots makes it a more rounded dish.

My dear friend S has been making my mouth water for so many months now with her ayala-manga curry. It is time I make it and post it to give my gastric juices a rest.

Jokes apart - thank u so much dear for reminding me of this fantastic combination which I'd forgotten. I made this with dried salted mango. OMG the taste was out of this world. This is by far the best fish curry I've ever made myself and had. Slurpppppp.

Fish curry Trivandrum style featuring drumsticks | Kukskitchen


Being born and brought up in the capital city, I have a few favourites from trivandrum. This particular recipe became close to my heart during my pre-degree days when my dear friend S used to bring in this fish curry made by her umma. I didn't know the recipe then, but made sure I knew it later on.

Being a native of Kerala, fish flows in my menus. Shallow fried spicy keralan fish is OMG yummy. My SIL's dad always says, what's there in life if one can't have a fillet of fried king fish for lunch. Hat's of uncle :-)



Recently the whole health-fitness theme has made me try baking/grilling my fish and chicken. A tiny splash of olive oil is all it needs for that heavenly taste. My friend S is a veteran on grilling fish, she adds fenugreek powder to the marinade which helps take  the fishy smell away.

Quick & easy fish curry: featuring coconut milk | Kukskitchen

Quick fix meals are my favourite, especially for a week night when u come home tired from work, only to find a couple of hungry tumms and a house full of chores. This particular fish curry is my favourite as it features my favourite ingredient coconut milk. Anything to do with coconut is close to my heart, being a girl from kerala. It is so quick to make and requires cooking skills next to nothing, honestly!

I dedicate this recipe to you working mums, bachelors and new cooks.




A few things before you start:
  • Shallots give a better taste and pearl onions if used give a fantastic flavour to the sauce.
  • Simmer at low heat for longer and avoid ginger garlic paste for a traditional taste similar to dry-baked fish (മീൻ പൊള്ളിച്ചത്‌).

Tuna mayo sandwich | Lunch box special | Kukskitchen



Our house hold luvs a packed lunch. Over the years I have tried all sorts of food for lunch. Most of them are very healthy and balanced since lunch time is the only time we as a family eat healthy usually :). My criteria for a good lunch includes quick to prepare, can eat with one hand, not too 'fragrant' and not too spicy. I will share more of my quick lunch recipes in time. Watch this space.


Tuna-mayo sandwich is one that frequently makes it's way to my lunch box. When I use mayonnaise I try not to use regular bread as the mayo leaves the bread soggy by lunch time. I try to make my own or use shop-bought baguette, a long thin loaf of French bread.

Fish fry marinade | Kukskitchen


There are various recipes to marinate a piece of fish to be fried. I present here two very easy fish marinade recipes. The amount of spices is calculated for 200g of fish. For those with a a high fiery threshold, I suggest doubling the red chilli powder/ paste. :) I use kashmiri chilli when I have it in stock as it gives ur fish fry such a beautiful vibrant colour. If using ordinary chilli powder, use half the amount pls.

Kashmiri chilli powder  - 2 tsp
Turmeric powder - 1/2 tsp
Curry leaves to taste

Fish hearts | Spicy Fish Cutlets | Indian fish cakes | Kukskitchen









Any one bought the wrong kinda white tasteless fish and did not know what to do with it? Well I have done it many a times and each time it turns in to something different. This time I thought I will try an east-west combo, not really a fish cutlet but may be more like a fish cake. The shape gives it the name - fish hearts. My valentine cookie cutter came in handy.
