A quick and easy healthy veggie side dish in Keralan style. It tastes lovely with rice or even roti. Ever since I heard about and tried the cabbage soup diet, I try to include cabbage in my weekly menu in one way or other.
Why cabbage?
100g of cabbage = 25 calories.
What more reason do you need my friends to use it whilst dieting? :) :) :)
More over, it has nutritional value as well. Dark green leafy cabbage is high in vitamin C as well as iron which make it a perfect food for anyone suffering from anemia as well as pregnant women due to its high folate content. Cabbage also contains beta-carotene and potassium. As a member of the brassica family, it also contains phyto-chemicals like glucosinolates which are proven to reduce cancer, especially lung cancer - MedIndia

Ingredients:
Cabbage - 2 cups shredded
Onion - 1 thinly sliced
Green chilli - 1 slit down the middle
Coconut shredded - 1/4 cup
Mustard seeds - 1/2 tsp
Urad dal - 1/4 tsp
Curry leaves - 1 sprig
Garlic paste - 1/2 tsp or more to taste
Salt to taste
Oil
Method:
- Heat oil in a pan and splutter mustard seeds, urad dal and curry leaves
- Add onion and saute till light brown
- Add shredded cabbage, mix well, stir in garlic paste, coconut, green chilli and salt and close with a lid. Let it simmer for about 5-8 minutes, stirring after every 2-3 minutes.
- Ready to eat!
