Skinny High Protein Banana Oatmeal Pancakes | Kukskitchen

As part of the high protein low carb initiative, I've turned my son's favourite meal in to a skinny high protein variant. There is somehting for everyone in this recipe. Protein powder for the man, banana and honey for the kid and blue berries for the female gene. Blueberries are full of antioxidants and are a brilliant support if you are trying to lose those extra few pounds.

A few things before we start:

  • I used oat bran, but you can also use rolled oats.
  • Substitute whole eggs with egg whites for a low fat version.
  • Fresh blueberries would be lovely. They just never last in our house.

 Skinny Banana Oatmeal Pancakes

Yield: 8-10 pancakes
----------------------------------------------------------------------------------------------------------

Ingredients:

1- Eggs - 4
    Ripe bananas - 2
    Cinnamon - 1/2 tsp
    Oat bran - 1/2 cup
    Protein powder - 1 scoop
2- Frozen blueberries - 1 cup
    Honey - 2 tbsp

Method:
  • Combine (1) in a blender of food processor and blend. 
  • Drop by 1/4 cup onto a hot, greased skillet. Cook on each side until lightly brown on each side. 
  • Place the frozen blueberries in a saucepan. Bring to a boil. Lower the heat and simmer for 3-4 minutes. Stir in the honey.
  • To serve: top your pancakes with a spoonful of blueberries. Drizzle with more honey if desired.
