Mussel fry | Kukskitchen

Mussels are not stangers in my  household as they are my mans favourite. You can prepare them in one too many ways. The recipe below is by far the quickest and easiest. The most difficult and tastiest I've been told is അരിക്കടുക്ക or കടുക്ക നിറച്ചത്, of malabar cuisine. I am yet to try that.

A few things before we start:

- I used cooked frozen mussels. You can use canned mussels or even better fresh mussels.
- If using fresh mussels, clean the shells thoroughly and drop them in hot salted water till the shells open up which indicated that they are cooked.

Mussel fry

Serves 5-6
----------------------------------------------------------------------------------------------------------

Ingredients:

1- Cooked mussels - 250 g (for tips on how to clean mussels click here)
2- Pearl onions (ചുവന്നുള്ളി) - 3-4
    Garlic pods - 2-3
    Curry leaves - 1 sprig
3- Red chilli powder - 1 1/2 tsp
    Coriander powder - 1 1/2 tsp
   Turmeric powder - 1/4 tsp
4- Oil 1 tbsp
5- Salt to taste

Method:

- Clean and prepare mussels.
- Crush pearl onions and garlic pods with a pestle and mortar. Slicing would do too.
- Heat oil in a pan and saute (2) till shallots turn light brown.
- Add (3) and saute till the aroma of oils hit ur nose.
- Add the cleaned mussels to it and mix well. Check salt at this point and add more if needed.
- Serve hot as an appetizer or as a side dish.
