My son loves pancakes. They can cheer him up at the end of a tiring day at school. They also act as a power breakfast especially on weekends when his tiny muscles need all the energy they can for a fast action-packed day.
I know I have shared with you all my version of high protein skinny pancake here. This version has more carbs per gram and tastes delish served with some chilled icecream.

Pancakes for kids
Serves: 4

Ingredients:
1 - Plain flour - 1 cup
Sugar - 2 tbsp
Baking powder - 1 tsp
Baking soda - 1/4 tsp
Salt - 1/4 tsp
Buttermilk - 1 cup
Oil - 1 tbsp
Egg - 1
2 - Nonstick cooking spray
3 - Berries - 2 cups
Syrup- 1/4 cup
Toasted sliced almonds - 4 tsp
Method:
- Mix (1) well without lumps to a thick pouring consistency.
- Heat a medium pan on medium heat and spray some cooking oil on. Pour 1/4 cup at a time of pancake batter and let it cook. Do not swirl your pan or spread the batter with spoon. You are aiming for a thick pancake.
- Turn your pancake using a broad spatula once the bottom starts to turn light brown. Let the second side brown up and remove from pan.
- Serve warm with a generous scoop of vanilla ice cream and a healthy sprinkle of berries.
