Schezwan Fried Rice  Sichuan / Szechuan / Schezwan Cuisine | Kukskitchen


Schezwan fried rice is a spicy chinese rice flavoured with freshly prepared Schezwan sauce. It is simple and quick to make. It can served with raita and prawn crackers or pappadam or with a meat curry. I served it with Duck curry for Easter.


A few things before we start:

  • Soak basmati rice for 15 minutes. Now pressure cook it with 1:2 ratio water for 3 whistles on medium flame and cool thoroughly.
  • I use carrots,capsicums,cabbage and spring onion. Save some spring onion greens for garnish.
  • To make mixed fried rice, add cooked chicken, strips of cooked seasoned egg, prawns or any at all that you fancy along with the cooked rice.

Schezwan Fried Rice

Serves 2

Ingredients:

Cooked basmati rice - 1 cup
Vegetables - 1 1/2 cup, chopped
Onion - 1, chopped fine
Oil - 2 tsp
Schezwan sauce - 2 tbsp
Salt to taste

Method:


  • Heat oil in a wok, add the chopped onions and fry till golden brown.Add the vegetables and saute till they are cooked but still crunchy.
  • Add the sauce,salt and mix well. Now add cooked rice,few drops of oil and cover with a lid. Remove from heat. After five minutes mix gently making sure not to break the grains of rice. Garnish with spring onion greens and serve hot.

    1. Oooo yes Shibi. Woudl be really nice. That is in one of my drafts. I have becoem so lazy these days with posting recipes. I have hundreds of recieps and pictures of dishes in my draft folder. I should just crack on and write them up.
