Savoury Muffins to get kids eating vegetables | Egg Muffins | Kukskitchen


I struggle to get any vegetable down my little one. I frequently try to disguise them but kids now-a-days, as sharp as they are, realise the difference in taste and pick them out. So I changed my strategy. I will tell him what is in there but club it with some thing he finds really yummy.

Presented below is one such invention - Savoury muffin. He likes muffins (who doesn't!!) and he likes eggs and sausages. I have tried various vegetables in this muffin and he eats them hands down each time. Amma 1- Mathai 0. 

Make sure you serve with carbs in some form to make it a balanced meal. These yummy muffins go well with potato wedges and ketchup. To make them at home, blanch cleaned and wedged potatoes in boiling water for 6-8 mts. Drain and dry. Toss them in salt and pepper and a pinch of red chilli powder and oven bake at 200 degrees for 15 minutes.
