Mini strawberry cheese cake in a shot glass | Kukskitchen




A perfect dinner party dessert. Wow ur guests with ur presentation and then win them with the amazing taste of creamy strawberry creme.













































A few things before you begin:

Whilst pressing down ur biscuit base, apply moderate pressure, as too much pressure can make a hard, difficult to spoon base. What u r looking for is a crumbly spoonable, yet kept together base. Once the cream mixture is well mixed check for any clumps or grains. If so, try using a sieve to keep out the bits. Serve then in shot glasses to help in carb/fat cutting, if ur guests r anything like mine :)

Mini strawberry cheese cake in a shot glass
Serves: 10

Ingredients:

1- Digestive biscuits - 250 grams
    Butter - 75 grams (melted)
2- Gelatin - 1 tsp 
    Hot water from kettle - 3 tbsp 
3- Double cream/ whipping cream - 1 cup
    Strawberry puree- 1/2 cup  
    Sugar - 1/2 cup
4- Fresh strawberries – for garnish

Method:


  • Blitz the biscuits in a food processor.
  • Mix (1) well and spoon into the bottom of a shot glass and make sure to press down just enough to keep them together and refrigerate for 20 - 30 mins.
  • Sprinkle gelatin to 3 tablespoons of hot water from kettle. Mix well and allow to cool.
  • Whip cream until it forms soft peaks then add rest of (3) and gelatin. Mix well until  well combined.
  • Spoon the above mixture on top of the biscuit base and refrigerate for 1- 2 hours.
  • Garnish with fresh strawberries before serving.
