Easy Christmas boiled fruit cake  | Kukskitchen

A traditional fruit cake is what I usually make for Christmas. However, this calls for soaking dried fruits in Rum for a good few weeks at least, for a dense flavour. Now, last year my dear friend S found this recipe on Joy of baking website and we both fell in love with this straight away. It not only does not require the long process of soaking, and the result is equally good. For longevity, this non-alcoholic cake can be soaked in brandy for 3 days and result is super awesome. The cake turns extra moist and it stays moist for as long as it can stay in your food cupboard.

This cake got such gorgeous reviews at my work place that I had to make them a second time between Christmas and New Year. Also our dear friends devoured this cake and my friend who is a super talented cook, who hates sweet things, took second serving, which I consider a great honour.

This cake is best for the last minute baker perfect for a Bachelor especially since this cake does not require a cake mixer.

Marble cake is a fond childhood memory. It is one of the cakes that my mum used to make and we loved her cakes.

I remember one evening my mum had made her chocolate marble cake with butter cream frosting and my brother's friends visited. My brother had (still have) really good friends. I can not remember if it was his birthday, but a few of them stayed the night. We all had a piece of the cake each after dinner. It was getting late and we all retired to bed. Now, the rest of the delicious cake was in a serving dish covered by food net on the dinning table. The next day morning when I came down from my room, all I found was an empty plate on the table. The cake was no where to be found. Mummy was enquiring about the 'lost cake' and the very conscientious, sincere R chettan confesses the truth. At night when everyone was fast asleep he came down not one but many times to our dining room finishing off the cake one piece at a time till none was left. I tell the tale each time I have this cake remembering the taste of my mum's delicious marble cake and butter cream frosting.

Fondant icing gives your cakes that wow-factor transforming a delicious homely cake to a spectacular piece of art. I have had my fair share of lucks and flops with various fondant recipes. The Wilton recipe is by far the best and I use it each time now.

What is needs is a few special ingredients that is not found in a day-to-day kitchen cupboard, for instance glucose syrup and glycerin. Luckily these are ingredients freely available in supermarkerts in this country. They can be found at the chemist's shop if you are in India.

Christmas brings fond memories of my childhood. There would be lent (no meat) for nearly a month, all the sacrifices you make on advice from the nuns and priests of my beloved church, singing at the midnight mass and all the merriment. I did this even in my medical college and house surgeoncy days.  It was fun!

Also, in memory is the Christmas cake and wine served to any one that comes through the door over the festive period. The wine would be home made, sweet wine with a mini-kick. My non-Christian friends would devour the cake.Since I became a home maker after marriage, I have tried many a traditional recipes, but a classic Christmas cake is one that I didn't dare attempt. Until I came across Delia Smith's recipe to a classic English Christmas cake and desperately wanted to try it.

My little 5 year old loves cooking and helping around in the kitchen. He calls himself my little Elf helper. Bless! . It is so much fun cooking and especially baking with your little one, I'm sure a lot of you would agree. Today he wanted to try a cake by himself and  I could only let him use the microwave, for obvious reasons. This would be his first - he is growing :)

This recipe is perfect for that Bachelor boy who wants to whip up a quick tasty spongy delite away from home on a festive day. It goes brilliantly with some vanilla icecream if you wanted to wooo a special friend /friends by cooking for them.

Left over bananas have turned black... not sure what to do with them. I have got the perfect recipe for a banana cake that melts in your mouth..... one of the easiest cakes you can make... delivers the same gorgeous result each time.

I used my banana muffin recipe to make the cake. Bake them for an hour at 170 degrees in a fan assisted oven and VOILA your gorgeous banana cake is ready to serve. They are great served warm with a cup of tea.

My maternity leave days were spend watching cooking programs on the television with my mum or my mum-in-law both of whom share my passion of cooking (or rather I share their passion for cooking). One of our favourite shows was barefoot contessa by Ina Garten. She explained recipes with such flow and you wanted to make them straight away. I recorded her shows and watched them when little Mathew went to sleep.

This is the best carrot cake recipe ever. Now what makes it the best recipe ever is a secret ingredient. You will find it in the ingredients. Like all carrot cakes this uses oil instead of butter. It is the secret ingredient that gives the cake all its moisture. Thank you dear Simone for passing this recipe on to me. I used wilton's butter cream recipe and did ruffles to give a simple finish. I will share the recipe in my next post. Watch this space.

I made it for my son's birthday just gone. It was his 5th and he was super excited. He loved the cake. We had it for breakfast.

Princess doll cake and a round up of this month's cakes | Kukskitchen

Here is a round up of all the cakes I posted in my blog in the month of August which also marks the first birthday of my blog.  Also are pictures of the beautiful doll my sister-in-law R made for her daughter's birthday while we were in Kerala. She had all the cake planned.  I got the opportunity to do the fondant icing on the cake. Thanks R. She is a great cook herself and frequently features in Keralan TV cookery shows.

Had a few hiccups in the process. The humid keralan climate made the fondant sticky and guey making it extremely difficult to get big sheets rolled out for the long dress at the back. We googled for remedies and now we know what to do for next time.( I think) :) I will post my recipe for fondant in another post. Watch this space.

Cream cheese pound cake : the softest and moistest cake I have ever made | Kukskitchen







While searching for a cake base for my son's second birthday football cake, I was quick to decide a simple yet delicious cream cheese pound cake would be the winner. Also it would be lighter in texture since my other cake was a rich red velvet cake. I used cream cheese frosting with a touch of green and laid down the grass on the football ground using the grass tip. The goal post and players are plastic and shop bought.

When I decided to do my month of cakes I knew instantly which cake would make the grand finale at the end of the month - the red velvet football cake. I made this for my dear dear son's fourth birthday when we invited his school and other friends over to a soft play centre. We had loads of fun that day. It was a football themed party - surprise! surprise!  The kids had a gala time with the care taker turned football coach 'training the young beckhams' how to score goals.

Cakes are an essential part of any christmas, but always feel guilty after having a generous portion ( actually several generous portions) of the scrumptious cake. For christmas last time I decided to go for a healthier option which would involve my not so veggie loving son to eat ( with delight) a vegetable that he has refused to try before - Beetroot. My dear friend Priya of Cook with priya, who I met through blogging, posted a gorgeous beetroot cake a while ago which I thought was perfect for my needs. So decided, I went for it.

Chocolate and banana cake | Kukskitchen





Last few days pf school year is fun-packed and involves a lot of yummy food. I was very quick in offering to bake for every occasion possible in my little one's school: be it his last day party or garden picnic. I ended up making a chocolate and banana cake for one of them and used the recipe to make muffins for the garden picnic along with black forest berry and whit chocolate muffins. They went down well.
