Last few days pf school year is fun-packed and involves a lot of yummy food. I was very quick in offering to bake for every occasion possible in my little one's school: be it his last day party or garden picnic. I ended up making a chocolate and banana cake for one of them and used the recipe to make muffins for the garden picnic along with black forest berry and whit chocolate muffins. They went down well.
They are a good way to get kids eat fruits.

Chocolate and banana cake
---------------------------------------------------------------------------------Ingredients:
1- Medium sized ripe bananas (mashed) - 2
2- Plain flour - 240g
Sugar - 380g
Cocoa powder / drinking chocolate - 75g
Baking powder - 1 1/2 tsp
Baking soda - 1 1/2 tsp
Salt - 1/2 tsp
3- Milk - 120ml
Warm water - 1 cup
Eggs - 2
Oil - 120ml
Vanilla extract - 1 1/2 tsp
Method:
1.Preheat oven to 180 degrees C and place rack in the center of the oven. Butter and flour a pan (23 x 33 cm) .
2. In a large bowl sift the (2). Set aside.
3. In another large bowl, whisk together the (3) and mashed bananas. Add the wet ingredients to the dry ingredients and stir/whisk, until combined.
4. Pour the batter into the prepared pan and bake for about 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
5. Remove from oven and let cool on a wire rack.
Butter cream frosting :
Butter, softened - 140g
Icing sugar - 280g
Milk - 1-2 tbsp
1. Beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth.
2. Add the remaining icing sugar and one tablespoon of the milk and beat the mixture until creamy and smooth. Beat in the milk, if necessary, to loosen the mixture.
3. I used Wilton tip 1M for the roses finish.
