This is a photograph I took before my blogging days. I absolutely love fruit in cakes. Gives a sense of guilt free pleasure although the cake is still very caloric.
A few things before we start:
- You can sprinkle 1/4 cups of nuts along with the apples for an extra crunch and taste.
- Remember this is an upside down cake. Layer the apple slices carefully as this would be your presentation side.
- Best served warm.

Apple upside-down cake

Ingredients:
1 - Butter 2 tbsp
Brown sugar - 1/2 cup
2 - Peeled sliced apples - 3 cups
Lemon juice - 1 tbsp
3 - Butter - 1/2 cup
Brown sugar - cup
Granulated sugar - 1/3 cup
Egg - 1
Vanilla extract - 1/2 tsp
4 - Plain flour - 2 cups
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cinnamon - 1 tsp
Nutmeg - 1/4 tsp
Salt - 1/4 tsp
5 - Buttermilk - 1/2 cup
Method:
- Preheat oven to 375 degrees.
- In a 9-inch square baking pan melt 2 tablespoons of butter. Sprinkle 1/2 cup brown sugar over the bottom of pan.
- Slice apples and place in a bowl. Drizzle lemon juice on top and toss. Arrange apple slices in pan on top of brown sugar.
- In a mixing bowl beat soft butter for about 30 seconds. Add sugars and beat until fluffy. Add egg and vanilla. Beat together.
- In another mixing bowl sift (4).
- Add a spoonful at a time of the dry mixture to the wet mixture, alternating with the buttermilk ending with buttermilk.
- Spread this batter over apple slices.
- Bake for 40-45 minutes and until a toothpick inserted comes out clean.
- Allow cake to stand in pan on wire rack for 10 minutes .Invert onto a serving platter and serve.
