Savoury Muffins to get kids eating vegetables | Egg Muffins | Kukskitchen


I struggle to get any vegetable down my little one. I frequently try to disguise them but kids now-a-days, as sharp as they are, realise the difference in taste and pick them out. So I changed my strategy. I will tell him what is in there but club it with some thing he finds really yummy.

Presented below is one such invention - Savoury muffin. He likes muffins (who doesn't!!) and he likes eggs and sausages. I have tried various vegetables in this muffin and he eats them hands down each time. Amma 1- Mathai 0. 

Make sure you serve with carbs in some form to make it a balanced meal. These yummy muffins go well with potato wedges and ketchup. To make them at home, blanch cleaned and wedged potatoes in boiling water for 6-8 mts. Drain and dry. Toss them in salt and pepper and a pinch of red chilli powder and oven bake at 200 degrees for 15 minutes.



A few things before we start:


  • Use egg whites alone for a low fat high protein snack.
  • Use any vegetable you like or rather your chottas doesn't like. Make sure to cut them in to bite size pieces.  
  • Add bacon bits for extra flavor.
  • Add a few pieces of cooked potatoes to add carbs.
  • Whisk eggs for  a good few minutes for a souffle effect.
  • I used hot dogs on this occasion
  • You can use fresh or frozen vegetables, works well either way.

Savory Muffins
Makes 4
 ---------------------------------------------------------------------------------------------------------  

Ingredients:
Eggs - 2
Sausages - 2
Green peas - 1/2 cup
Sweet corn - 1/2 cup
Turmeric powder - a pinch
Salt to taste
Pepper to taste

Method:
  • Pre-heat oven to 200 degrees 
  • Spray oil on to a muffin tray
  • Whisk eggs well till frothy. Add turmeric powder, salt and pepper and mix well.
  • Cut coins of sausages and place them at the bottom of the muffin tray. Add peas and sweet corn.
  • Pour over the egg  mixture to cover the veggies.
  • Bake for 20 minutes at 200 degrees.
  • Serve hot.
Serving suggestion:
  • Serve with salad for a protein packed snack
  • Serve with potato wedges (recipe above) and ketchup for a full meal for kids.
