Waldorf salad | Kukskitchen



It is my son's 5th birthday today and I thought why not share something that he made. Presented below is a Waldorf Salad that he made during is holidays as part of his School project. They all had to decide on a recipe, buy ingredients, prepare, write the ingredients and method and take a picture of their creation and take them all to school. We decided on this salad as it was easy to make and write and delicious to eat. It ticks the healthy box too. So off we went. We did a bit of research as to how and where it was first prepared etc. He had just recovered from chicken pox then. I think you can still see the scars if you look carefully. He was ever so excited to do this project still. :D







According to the American Century Cookbook, the first Waldorf Salad was created in New York City in 1893, by Oscar Tschirky, the maître d’hôtel of the Waldorf Astoria. The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise. Chopped walnuts were added later to this now American classic. Some prefer their Waldorf salad made with yogurt, instead of mayo.





A few things before we start: 
  • The original recipe calls for mayonnaise, but we used full fat thick greek yogurt and it was delicious.
  • You can substitute grapes with 1/4 cup of raisins.

Waldorf Salad Recipe

Prep time: 10 minutes
Serves 2.

Ingredients:

Slightly toasted walnuts - 1/2 cup
Celery, thinly sliced - 1/2 cup
Red seedless grapes, sliced - 1/2 cup
Sweet apple, cored and chopped- 1
Mayonnaise - 3 tbsp
Fresh lemon juice - 1 tbsp
Salt
Pepper
Lettuce

Method:

  • In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.
