Rava kesari is something that I grew up with. My mum used to make it like halwa. It was always yellow in colour and us kids loved it. I make it in a spoonable consistency and it tastes creamy.

Haresa | Basbousa | Healthier no-egg middle eastern coconut and semolina cake | Kukskitchen

Haresa / Basbousa (coconut semolina cake) is a middle eastern delicacy. It is a cake that is healthier quite flavoursome and very light on the tumm.  No eggs are used and a fraction of the usual amount of butter is used to prepare it. It is perfect if you are looking for a delicious dinner party dessert which your guests would luv but which would not travel up their hips straight. :)

Rava idli | Steamed semolina cake | My first guest post | Kukskitchen

A few things before you start:

- Use slightly sour natural yogurt for a better taste.
- If using roasted rava, skip sautéing rava in pan. 
- For a white idli, omit turmeric powder. 
- Best served hot with a hot cup of tea and tomato-coconut chutney

Rava Idli
റവ  ഇഡലി

Ingredients:
1 – Rava / semolina -1 cup 
2 - Mustard seeds - 1/2 tsp 
     Urad dal / uzhunnu -1 tsp 
3 - Dried red chillies - 2 
     Curry leaves-1 sprig 
     Turmeric powder-1/4 tsp 
4 – Salt to taste 
      Baking soda-1/2 tsp 
5 - Yogurt-1 1/3 cup 
      Water – 1 /4 cup 
6 - Oil-1 tbs 

Method: 
  • Grease the idli pans and keep aside. 
  • Heat oil in a pan and splutter mustard seeds and urad dal. 
  • When the seeds begin to pop add broken red chillies, curry leaves and turmeric powder and saute for half a minute. 
  • Add rava, mix well and saute for 2 mins on medium high heat till rava turns golden brown in colour. 
  • Remove from heat, add the salt and baking soda and mix well. Set aside to cool. 
  • 5 minutes before making the idlis, mix in the yogurt. Set aside for 5 minutes. If the batter is too thick add water. The batter should be resemble idli batter. 
  • Steam for 10-12 minutes till done.

Utthappam - featuring semolina, plain flour & yogurt



If you are looking for a quick breakfast recipe, here is one of the quickest of them all.

I saw this recipe in Food Mazaa hosted by Shobha. I made no major changes to it.




Ingredients:


1 - Semolina - 1/2 cup
     Plain flour - 1/2 cup
     Yogurt - 1/2 cup
     Coriander leaves - 1/4 cup finely chopped
     Salt to taste

2 - Onion - 1 finely chopped

3 - Mustard seeds - 1 tsp.
     Dry red chillies - 2
    Asafoetida - a pinch
    Curry leaves - 5-6
    Turmeric - a pinch


Method:


- Mix (1) adding a little water to make a thick batter. Add salt and coriander leaves.

- Heat oil in a pan, fry (3) and add the chopped onion.Stir fry for a minute.- Add a pinch of turmeric powder in the end and mix this into the batter.
- Spread a ladle of mixture on the griddle, cover with a lid. After 1-2 minutes turn it over and cook for another 1-2 minutes.
- Serve hot with coconut chutney.
