A quick breakfast with left over bread with some veggies and some egg. Yes, that is it. I made this as a healthier option while making french toast for my 6 year old. To my surprise, he liked so much he didn't want any french toast. I was very pleased it worked. So guys, try it and see how your little ones like this masala toast.

A whole roasted Indian Chicken is a winner at any dinner party. It can be done in umpteen number of ways. Some of the recipes have biriyani rice stuffed in the chicken's belly. I know, that can be such a show-stopper. I share with you here one that I most like and straight forward to make. It is time consuming, but for most of the cooking time the chicken can be left unattended giving time to prepare its accompaniments like Tandoori roti or favoured rice.

On popular demand I present to you my readers the recipe I use for chicken tikka masala or butter chicken. the below recipe is one that my dear SIL R kindly passed on to me a good few years ago. She is a great cook and we inspire each other from time-to-time. This recipe is a crowd pleaser - njan guarantee :)

There are more than a handful of stories about the origin of this popular dish.

In 2001, British Foreign Secretary Robin Cook declared that "Chicken Tikka Massala is now a true British national dish, not only because it is the most popular, but because it is a perfect illustration of the way Britain absorbs and adapts external influences." He went on to explain that "Chicken Tikka is an Indian dish. The Masala sauce was added to satisfy the desire of British people to have their meat served in gravy.(wikipedia)

Gulab Jamun {recipe no 3} using secret ingredient | Kukskitchen

Yes, these are perfect, with a soft centre, perfect shape and delicious taste.Now, you will want to know what is that secret ingredient that made me, the jamun killer, make perfect jamuns. It is egg, I know, egg... who would have thought.

A good few months ago when I was toiling with my ingredients to make the perfect jamuns, my foundation doctor at the time was a sweet young girl, S. She gave me this tip, seeing  my misery. Thanks a ton darling.

When you have the perfect recipe, jamuns are the easiest Indian sweets to make and they are soo damn delicious too.

Last week we were at an asian restaurant chain called Akbars. We always enjoy their food and their curries taste more like traditional curries and are far from their Anglesized versions you get in most Asian restaurants in UK. Little mathew took control. He ordered the curries and we ordered tandoori roti. They were like naans but very light and fluffy and I was already thinking how to make them at home. One thing lead to the other and here is a brand new recipe for naan @kukskitchen. I have seen several techniques to get the tandoor effect of which my favourite is the pressure cooker method. Here you wet one side of the flattened dough disc and stick your dough disc to the side of a pressure cooker. Now place the cooker upside down on to medium flame and let the top side brown. However, I love my pressure cookers too much to even try this. :( ........So instead I pan cooked one side of the naan and using a tong, flame-cooked the other side. The results were perfectly fluffed and charred tandoori roti.... I was very pleased.

The direct flame technique is what makes this naan recipe a winner. Please do try this technique and let me know.

Arabian Chicken Majboos | Kukskitchen



Similar to Biriyani, this arabian classic (its adapted version) is a favourite in North Kerala, particularly in Muslim families. I love this due to its simplicity, and the fact that it makes its own stock in which the rice cooks. To me the favorite part of the dish is the flavoursome rice.

Chicken Biriyani | Kukskitchen


Biriyani is every Indian's favourite dish, especially for special festive occasions. A good lip smacking biriyani beats any other dish in any other cuisine in my opinion. :D. This biriyani was the star in our recent get together when my dear friend SP made it who is a brilliant cook. Now, she got this recipe from SG and, God, it ws so yummy. One of the best I've had. My dear friend S has been making my mouth water for so many months now with her ayala-manga curry. It is time I make it and post it to give my gastric juices a rest.

Jokes apart - thank u so much dear for reminding me of this fantastic combination which I'd forgotten. I made this with dried salted mango. OMG the taste was out of this world. This is by far the best fish curry I've ever made myself and had. Slurpppppp.

Puttu, steamed rice cake, is a frequent visitor in every Keralan house. The classic combination is puttu with Chick pea/Bengal gram curry കടലക്കറി. With the advent of restaurants who specialise in puttu like 'ദേ പുട്ട്' by the famous mallu Cine actor Dileep, umpteen new combinations have emerged some old some new. പഴം പുട്ട് is one such delicacy which has now found its way to house holds like mine. It does make the humble പുട്ട് an exciting make over.

Beef Varattiyathu | Irachi varattiyathu | Kukskitchen


This dish does bring back memories. My mummy was a working-mum and had five hungry tums to feed. Especially after having my son and when I struggle to juggle work and home, I think about how it would've been to my mum in those days. Hats off to you mummy :).

This beef varattiyathu was a frequent member of our lunch boxes as a dry fry. Beef was my dad's favourite and we always had beef in our menu.  I dedicate this post to my dear mummy this new year for all your hard work through the years and for instilling this love for food in me.

Ulli vada has always been a childhood favourite. My earliest memories are eating those ginormous ulli vadas bought from Mariana bakery in Kowdiar in Trivandrum (Capital city of Kerala) near St. Santhal school. I did my UKG (reception) there. The ulli vadas they make are simply out of this world. What makes them special is the crispy out side and the firm tasty inside with out much flour in them.

Chicken 65 {Recipe no:1} | Spicy fried chicken | Kukskitchen


Chicken 65 is an extremely popular starter in the southern part of the Indian peninsula. It is deep fried to give its authentic crispy texture. It is said to have it origin in the famous Buhari hotel in Chennai, introduced by its founder Mr A.M. Buhari himself.
