Coconut rice | Thenga sadam | Coconut pilav


This is one quick and easy rice dish to use up left over rice.



A few things before we start:
  • You can use left over rice or freshly cooked rice. 
  • Dessicated coconut can be used; however, the taste is some what compromised.
  • Add some dried red chillies together with whole spices if you like the heat.

Coconut rice / pilav

Ingredients

1- Boiled Rice- 2 cups
2- Salt to taste
3- Peanuts- 2 tsp
    cashews- 2 tsp
4- Coriander Seeds- 1 tsp
    Cumin Seeds-1 tsp
5- Coconut- 1 cup grated
    Curry leaves-10-12

Method:

  • Heat 1 tbsp oil in a wide pan and fry peanuts and cashews. Keep aside. 
  • To the same oil add coriander and cumin seeds followed by curry leaves and coconut
  • Add in cooked rice and mix to combine.
  • Add the fried peanuts and cashews, mix well.
