Spring gem lettuce and micro leaves salad with Yoghurt dressing | Kukskitchen

It is the first day of spring and I feel the best way to start this spring is with an uplifting spring song and a refreshing salad.

Last Friday it was Easter play in my son's School. The kids and teachers who prepared them did such a great job of it. My little one was a narrator and then a rain drop watering plants. It was all so cute and us parents loved every bit of it. The play ended with a song called spring chicken and OMG it was such a funny song. His music teacher is very talented and she made them do all the right fretta and grave beautifully. The kids all sang in such harmony and I was very proud of my little champ. The song is as below:

Eating fruit couldn't be better with this warm fruit salad. The cinnamon and lemon give the plums and extra flavour. I love passion fruit in anything at all and this salad saw some of the flesh thrown in at the end, not to mention the extra texture it offers. My fruit only dinner hence got a gorgeous makeover.

Waldorf salad | Kukskitchen

It is my son's 5th birthday today and I thought why not share something that he made. Presented below is a Waldorf Salad that he made during is holidays as part of his School project. They all had to decide on a recipe, buy ingredients, prepare, write the ingredients and method and take a picture of their creation and take them all to school. We decided on this salad as it was easy to make and write and delicious to eat. It ticks the healthy box too. So off we went. We did a bit of research as to how and where it was first prepared etc. He had just recovered from chicken pox then. I think you can still see the scars if you look carefully. He was ever so excited to do this project still. :D
