Malabar cuisine is a gift from the Arab traders and French rulers to the native Zamorins and Namboodiris. This delicacy is made for the പുത്യാപ്ല , the new groom by his mum-in-law traditionally I'm told.

Arabian Chicken Majboos | Kukskitchen

Similar to Biriyani, this arabian classic (its adapted version) is a favourite in North Kerala, particularly in Muslim families. I love this due to its simplicity, and the fact that it makes its own stock in which the rice cooks. To me the favorite part of the dish is the flavoursome rice.

Unnakkai: Ripe plantain cakes with sweet jaggery coconut filling | Kukskitchen

Unnakkai is a traditional sweet made on special occasions and is one of the gems in the malabar cuisine. My mum made it for one such special occaison; my 'pennu kanal'

The recipe below is adapted to my palate and is NOT the traditional recipe. I will post the traditional unnakkai recipe soon.

Keralan chicken biriyani | A treat for the soul | Kukskitchen

This is one of the best chicken biriyani recipes I've ever owned. Tastes superb each time. Takes a bit of work and hence get made in my kitchen on occasion. This recipe is sourced from my dear S I L. This one she inherited from her mom. A few changes ( very few) were made by yours truly :-)

Keralan lasagne | Crepe's layered with chicken | Chatti pathiri | Chatti pathil | Adukku roti | Ottada | Kukskitchen

Happy Eid to one and all!

Eid calls for a peek in to the famous Malabar cuisine.

Malabar cuisine is an integral part of Keralan cuisine. The flavours of Arab, Brahmin, Zamorin and Chirakkal cuisines have been incorporated into Malabar cuisine, making it quite distinctive. Kozhikode and Thalassery, known as the centres of Malabar cuisine. I try my luck on malabar cuisine when ever I can. This recipe is sourced from thas, with a few alterations by yours truly :-)

Pathiri | No-rise rice pan cake | Kukskitchen

I started making pathiri only a few years back. I have fallen in love with it ever since. It is not only quicker to make than most breakfasts and requires no preparation what so ever. Presented is what I do to make my pathiris.

The method might seem long because it includes all fail safe mechanisms too. Real time cooking takes not more than a minute or two per pathiri.

- I usually get 6-7 pathiri's from this recipe.
